I've actually recently started training [seidomd.com] with sai.
A basic technique is rotating them around the "guard", so that it flips from the long "tine" lying along the forearm and the butt of the handle being availabe to strike with, to the "tines" being out.
Good sai (not the cheap chome kinds) are rather heavy.

The weapon had the best range in not only the original NES game, but many of the next generation turtle titles as well including the Arcade Game [wikipedia.org]. I always chose Don for mostly this reason, but I also admit a fondness for the color purple! I don't know if I'm the only one who based part of my decision on the bandana colors.
In one version (I think it was the PC), he swung the weapon too high to hit the shorter baddies on ground level, negating his reach in those instances. He had to do a downward swing when they were close to hit them. I believe it was on the NES where he swung low enough to actually hit the smaller enemies with his reach. That was handy.

Donatello was the one with a bo staff. His cartoon color theme was purple. He was the wise cracking geek inventor on the team.
Michelangelo was the one with a pair of nunchaku (two sectioned staff). In the caroon, his color shceme was orange based. He was the easy going, pizza obsessed one who kept yelling cowabunga.

They're (more or less) the same swords. Ninja were basically samurai with a different code of honour, and a bit more eclectic with their weapon choices. But there were no "ninja swords".
