Your problem is the lectins present in rice, not yeast - and you confirmed it yourself by saying that it doesn't happen with potatoes. Yeast doesn't care whether the starch is in rice or potatoes.
With celiac disease, your gut lining is thinner than with normal people, so you are far more sensitive to gluten and other lectins. Basically, lectins "leak" into your bloodstream through your gut. This happens with healthy people, too, just that they have less prominent symptoms as their lining is thicker and gluten will "only" thin it but not entirely compromise it.
Look up leaky gut syndrome. After some research you may find that you ought to avoid most plant-based food, like I do.

This diet cured my arthritis, and for that alone it was worth it. The lover glucose and insulin levels have advantages, too.
Arizona has great climate, actually - in the sense that the air humidity is usually extremely low, making the high heat very much bearable and actually pleasant. It is why it's one of the most suitable states for old folks (like me...?).
It might be a psychological thing. If you leave work and get into your car, the work day is done. But if you take public transport, it kind of feels like you're only really done when you get to your front door.
Interesting, I see it almost the exact opposite - when I am in public transport I can do a lot of things like relax, read a book, watch a video, etc. In a car, I have to drive, which oftentimes isn't relaxing. I have seen the traffic in some US cities, and I don't think that's even remotely relaxing (that said, there are cities, especially in California, where I just couldn't live at all).
So for me the time in public transport is more mine than the job's. But what is 100% MY time is when I bicycle to and from work. I enjoy it so much, it's truly mine.

There hasn't been a shadow of a doubt in my mind that we're headed to idiocracy. The average IQ in my (north-European) country is steadily declining, and it seems the same thing is true for North America. I really hope Japan will make a last stand and this BS won't get in - even if Windows 10 already has.

Seriously.. their conclusions pretty much come down to that argument. Either it is 'well, if you don't shoot people as part of a study and only look at people who have been shot, that isn't controlled enough' or 'well, blood loss is the real killer, not the bullet, and blood loss could come from everywhere',.. with a bit of 'we did a study that found people really like bullets, and popularity is important!. That seems to be the core of their 'inconclusive' conclusions.

There are populations that haven't eaten a single "plant" for generations, and are healthy. Yes, not even vitamin C deficiency.
But on the flip side, many plants are trying to kill us. Read up on autoimmune diseases and lectins.
You do NOT need carbs. In fact, while delicious, carbohydrates have only deleterious effects on health. A zero-carb diet makes a lot of scientific sense.

Olive oil tastes better, but it isn't healthier by any means. It is rich in multi-unsaturated fatty acids which are extremely unstable and prone to oxidation/rancidification. Butter has almost exclusively fully saturated fatty acids, with very little risk of oxidation and hence, healthier.
BTW, I was believing the same thing about unsaturated fats, for years. Only recently did I actually come across scientific information that goes against the grain.
