Journal jawtheshark's Journal: Loaf #4 10
On muliply, I posted about my baking antics. I don't remember how many loafs I've made by now. I think this is my fourth. I cannot check as I deleted my multiply account without backup. I now present you Loaf #4.
This time, I chose a different flour. The first three ones were "Pain de Campagne" or in English "Farmers Bread". (Loaf #1, Loaf #2, and Loaf #3 is on my wifes camera and I'm not going to look where it is now. I'll edit the entry later when I have access to the pic while my wife isn't sleeping)
This one is a "9 Céreales", which means "9 Grains". The 600ml water I used was too much, so I had to add quite a bit flour to make it denser again. I also made much deeper grooves on top before putting it into the over in order to avoid the "Xenomorph"-look. This time it looks as if it came straight from a bakery. I am very pleased.

Yes, you posted 1, 2 and 3 but not 4 over there.
Use caution when adding a lot of flour above what the recipe requires. Sometimes the excess liquid is absorbed by the flour during the autolyse, and if you have added too much flour and overcompensate for the wet dough, you'll end up with a very pretty loaf that will work as a doorstop and little

Yes, but I chose to post only tech stuff on slashdot. Now, one could argue that baking is "tech stuff", I'll give you that. ;-)

Just a little update: The bread is fine... It is a bit dryer than the ones before, but it is in the same lines as commercial bread of that style. It isn't a doorstop... So I'm quite happy.
