What I want from AI regarding movies, is the ability to prompt stuff like "play me this movies but with these actors" or "this movie but in that time period" or "ever character but that one is a puppet" and have it play it me, for my own personal entertainment, with zero external costs, save the AI system.
There are many cases where fair use and profit can and do mingle. Every work of parody made commercially available would be a good start. Any sort of critique or commentary, whether it be reviews or a track-by-track breakdown of album x, falls squarely under fair use. It doesn't matter if it's a college dissertation, a random youtuber, or a commercially driven media conglomerate doing it.
