The quest I remember most from Morrowind:
While exploring some mountains, in the middle of nowhere, complete wilderness, a fellow (half-orc if I recall correctly) is standing there in armor. He talked to me and told me that he no longer desired to live; that he wished to die a warrior's death. And he attacked me until he got what he wanted. Umber was his name and his sword I kept. I just loved all of the unexpected things that Morrowind would throw at me.
