Like the pork recipe the other day, this is also not a very inspired, but makes for a decent staple in a large meal setting or if you just want something fast and easy to make. Quick-fried chicken cubes in brown bean sauce

10 oz. chicken breast meat
1 egg white, lightly beaten
2 tablespoons cornflour (corn starch)
4 oz. lard
1 teaspoon sesame oil

Seasoning
1 tablespoon brown bean sauce
2 teaspoons sugar
2 teaspoons rice wine or dry sherry
1 teaspoon ginger juice

-Cut the chicken breast into small cubes and dip into a mixture of beaten egg white and cornflour, coating evenly.

-Heat the lard in a wok and quick-fry the chicken until white and almost cooked through. Remove and pour off all but 1.5 tablespoons of the lard.

-Add the sesame oil and heat well, then fry the brown bean sauce briefly before adding the remaining seasoning ingredient.

-Mix well, then return the chicken and stir-fry until the seasoning ingredients coat the chicken cubes. Transfer to a serving plate and serve immediately.

  • You should know that I am very much more of a baker than a cook. I won't starve, and people don't leave hungry, but I never get raves about my cooking, either (which is fine because I do get raves about my baking;-)

    Anyway, I decided to make cheesy garlic mashed potatos last night and just did it. Maybe I'll turn intoa cook after all...
