I've decided to add a new chapter to my slashdot cookbook. Earlier chapters here:

I'll start it off with some vegetarian indian dishes. First up: Curried Chick-Peas. It's fast, it's easy, it's cheap, it's tasty.
Ingredients:
2 tablespoons of vegetable oil
2 tablespoons of ground coriander
2 tablespoons of ground cumin
1/2 teaspoon of turmeric
1/2 teaspoon of salt
1/2 teaspoon of sugar
2 tablespoons of flour paste
1 pound of chick-peas, cooked and drained
2 fresh green chillies, chopped
1 piece of fresh ginger, 2 inches long, finely crushed
3 cups fresh coriander (cilantro), chopped
2 firm tomatoes, chopped
1) For the curry, heat the oil in a large saucepan and fry the coriander, cumin, turmeric, salt, sugar and flour paste, stirring frequently until the water has evaporated and the oil separated out from the mixture.
2) Add the chick-peas, chillies, ginger, fresh coriander and tomatoes. Toss well and simmer for about 5 minutes.
That's it!
Random notes: I typically use canned chick-peas and it works out just fine. I also tend to use less of the fresh coriander, but you use as much as you like. Also obviously adjust the amount of chillies according to your spice preference. I typically use jalapeno peppers, but you use whatever kind you like best.
