In a fit of adventurous curiosity, I purchased for myself a pair of mangoes at the grocery this past week, and I remembered them last night after dinner. I've not had many mangoes, and this was a grand experiment. Without a clear plan for what to do with them, I cut one in half and scooped out the pulp with a spoon. Such was dinner.

Question: What's a good way to use a mango in preparing a main course? I am thinking that mango and chicken are a good match, but I am not sure how I would combine these?

    It was good on broiled chicken and pork chops.

    Plus, if my information is correct, chutney was invented to mask the flavor of rancid meat. So you reduce the need for refrigeration;)
    • people used to be thin because if the food didn't make you sick, just smelling it could ;) i mean WTF people subsisted off of pemmican... dried buffalo meat, lard and blue berries/other fruit..
      • Yeah, it used to be the fat people were all the rich folks who could afford food and live a life of relative leisure. Fat used to be a good thing. It was a measure of wealth and status, and could keep you alive during the lean times.

        Now, almost everybody can afford to be fat. An unprecedented amount of leisure time, occupations that do not required labor, and access to foods (both quantity and variety) beyond the imaginings of people from a hundred years ago.

  • Or perhaps blend into a sauce you will coat Chicken with.
  • I will add cut/diced cold mango to hot brown rice. Simple but tasty.
  • Feed mangos to cow; then cut up cow, cook, and eat? :-)
  • I'd be inclined to do something like sauteeing the chicken in olive oil, maybe with some green onions and a small amount of garlic, then add some sweet or semi-sweet white wine, and maybe some thyme and a little black pepper (I put that in everything). Cube the mangoes and put them over the chicken, and simmer until it is sufficiently cooked. Might need to add a little water as well.

    I have a Le Creuset cast iron skillet that works really well for that. It might also be good a little sweeter, perhaps

  • At least you're not like boyfriend of tuxette, who keeps buying box after box of Pakistani honey mangoes (each box at 3.5-4 kg). Our freezer is full of cut-up mangoes...

    As for a good dish - puree some mango flesh, add some diced onion, minced garlic, sliced chiles, and curry spices, and cook chicken in it. Serve with rice...
