The simplest one is PPTP. Windows (at least the professional version) has a server for this. Set it up in the Windows network center and open the port on your router. Just about every OS out there (including Android and iOS) has a VPN client capable of PPTP. Point that to your external IP, put in the username and password, and you're off to the races. After that, all that information is saved and all you have to do is hit "connect". There are various other protocols with extra levels of security and difficulty, but PPTP will get you a basic VPN pretty quickly that will still be more secure than exposing a private NAS to the internet.

I don't know how parent does it, but I'll tell you how I do it. I've got a dedicated server that is wired in (I wouldn't recommend WiFi for the server). I use samba on linux for sharing from the server. The same exact thing can be accomplished through Windows by just sharing a folder. My home theater pc is on WiFi (TVs in a bad place to wire it in) and runs XBMC. Share two folders from the server, one for TV shows and one for movies. Tell XBMC where to grab them from, it will automatically pull descriptions and cover art and then you have a basic HTPC setup. You can control XBMC from keyboard/mouse or any remote control that works with PCs. There are also XBMC controller apps for both Android and iOS. I like this setup because both the server and XBMC will work on whatever computer you have, with whatever OS you have on it. My wife likes it because she can pick up her phone and have a movie playing on the TV faster than you could grab a DVD off the shelf.

My slashdot password does not need to be high entropy. I can probably use the same password for a soylentnews account. While it's true that if one gets compromised, they both do, guess what? I don't care. Nope. Not one bit. Facebook's different, email's different, my bank is different. What do I care if my pointless accounts get compromised? If you're using these types of accounts on computers you don't control, it makes sense to have easy to remember passwords and keep the high-entropy passwords for the actually important stuff.
