I've been doing a lot of work with locally run open source models for document processing, summarizing etc. There is absolutely no reason to send your data off site.
I'm 55 and AI is the most exciting thing to happen in my career which started in the 90s. It removes a tremendous amount of drudgery from you work if you understand how to use it.
This 'new idea' is as old as dirt. My uncle had a similar system for his dairy cows in the 80s. How much they ate, how much milk they produced etc. We use to play nethack on his Kapro he used to crunch the numbers.
I picked veal in this case because I would bet this is closer to what you get with lab grown. It takes years of living and exercise to make muscle like from a adult cow. I seriously doubt they can replicate this in a lump that sits in a vat.
