Hi Debian-Edu/Skolelinux perfectly fits your needs. Skolelinux provides a full network solution for your school. You have a main server where your user data is stored. Then you can install a LTSP-Server to use so called Thin-Clients. These Thin-Clients are old machines. All applications are running on the LTSP. Additionally you can installed so called workstations :) All the needed profiles are available from one CD. Maybe you want to test a bit and see how it works.
