This was a result of the attack of Arab countries on one day old Israel. The day Israel declared independence in 1948, 5 aram armies attacked it with the aim of destroying it. Israel fought back and won. The same happened in 1967 when Israel captured the occupied territories. Jordan was illegally occupying it up until 1967 as the arabs rejected the UN partition plan while Israel accepted it.
Furthermore, the UN really didn't really legally have the right to split the land as the 1924 San Remo treaty legally gave the land (including modern day Jordan) to the Jewish people. Unfortunately, this law was never upheld by the international community.
