Christmas Cheer

Journal tuxette's Journal: baking 10

The season for extreme baking is just around the corner, and I've already started with some things. I whipped up a batch of brownies last night that will probably be tonight's dessert if we're not too full from the regular dinner, and when I come home from work I'm going to make some red wine cookies. I have to bake some chocolate chip (chunk actually, I chop up a few bars of dark chocolate to use as chips) cookies for a party next week and I'll probably make a second batch to have in our Christmas stash.

I'm also going to make a shitload of pepperkake within the next few weeks, and I have a cookie cutter that sort of looks like a penguin so I'm going to manipulate the cookie shapes and make an army of pepperkake penguins. I'll post pictures when the time comes ;-)

I want to make rum balls but can't find my recipe :-(

I'd like to bake a few more sorts but I'm not sure what. Any suggestions?

Does the rum have anything to do with the disappearance of the recipe?-)

I'd make something with coconut - like coconut crisps (here's one recipe [applesforhealth.com]), perhaps? Personally I am not that fond of chocolate and tend to get sick of it during Christmas anyway. It's always a pleasant surprise to find something chocolate-free at a Christmas party.

    • Oooh, I'm going to have to try that one! Thanks!

As for chocolate, I like it but I don't crave it. It's probably because my protein shakes are chocolate flavored, so I get my "fix" on a regular basis.

  • Around this time of year, I tend to want to eat spritz cookies. Yummy yum yum :) Made with butter, not margarine, and extruded out into small asterisk-shaped cookies.

    You might try those.
  • I'd like to know what the red wine cookies are about. You don't have to post the recipe, just give me an idea.

If you can get Napa Pinots over there, check out the 2001 Artesa [artesawinery.com]. It's $15US here, and worth at least four times that.
  • We made these one year for our Girl Scouts international fair.
  • red wine cookies? red wine even in your cookies :)

You had mail. Paul read it, so ask him what it said.
