It wouldn't work because of the frequencies involved. Reel-to-reel recorders are designed to record audio frequencies, which are pretty low frequency compared to video. The components used for the amplifiers and such are unable to handle the higher frequencies that carry a video signal. Its really all about bandwidth. :)
