While not a fix, I've found that if you re-boot the iPhone (hold down the Home and Sleep buttons for N seconds) MobileSafari doesn't crash anymore (at least for a while). When I first provisioned my phone Safari would crash multiple times per day. After a re-boot it stays up for over a week at a time. BTW, the iPod app was also crashing until the re-boot.
