Also by Norman: Emotional Design. Really good, and really good at tapping into user wants.
Why Software Sucks is another good one. Far more lighthearted, and really just a quick read though it hits home on a few issues.
Don't Make Me Think is amazing, though more web focused. Still has a lot of issues relevant regardless of the UI you are designing.
Tufte, mentioned below, has some great ideas on data representation, and warrants a look or three.
Universal Principles of Design is also wonderful, and gives dozens of excellent examples.
Designing for Interaction is another good one, and really gets into the interactive side of things.
