So far Chinese proved they can only steal/copy technologies (under the wing of course of the government).
Wake me up when they come up with their design and their architecture - i.e. starting with a blank sheet of paper and beat everybody and the rest of the World start to copy and buy licenses for their stuff. And then they have to learn how to create software and operating systems.
They cannot even design processors for phones - all are based on ARM and playing with RISC-V.
Germans, Japanese and Russians tried and failed for so many years.
If Chinese want to be independent, they have to start creating competitive software and operating systems or start using FOSS. Intel and AMD can with a blink of an eye change some or introduce some new instructions in x86 model , Microsoft, Adobe, Google, nVidia will release patches to align the software and they will make Chinese processors incompatible and make them piece of garbage.

* Self checkout machines - have you been recently in big stores? Here in Canada (Nofrills, Metro, CanadianTire, Freshco, WalMart, etc) for the last year they popped everywhere, sometimes only one or two "human" registers are working, the rest are machines.
Amazon does their share - only warehouse workers and they try hard to replace them. McDonalds are trying kiosks.
* Banks - when was the last time you actually went to a bank, branches are closing left and right.
* Autonomous vehicles - all big Silicon Valley shots and China are working hard, the moment one or two companies start implementing them, will be avalanche. First taxi drivers then truck drivers.
