From our experience tomcat is not that stable in a production environment. We put apache and mod_jk loadbalancing in front of several tomcats, this helps a lot minimizing downtimes. Nevertheless even under medium load it happens that proceses hang and eat up all the cpu, so you may have to restart tomcat and apache.

This happens in real world, almost never with load testing tools.
