Glass was cool. I have one, I like it, and nothing I've tried since has felt nearly as futuristic OR usable. The battery life was too short.
Somebody developed an AI app for them so you can use the camera and screen for slop. Blows my mind how usable they still are!

Entirely feasible, but you may have to throw out all the Internet of Monetization crap currently on your network and buy devices which do or can run open firmware like Tasmota or ESPHome. Home Assistant will probably be at the core of this. I think there's another one (OpenHAB?) but HA is where nearly all dev effort goes. Heuristics are available by default, LLM can be added.A Wireguard tunnel into your network (or, if you insist, actually exposing the HA box to the Internet) will get you external control. I think this is what you want.
I own a bunch, but have 4 in service, two of which are general-purpose NAS/jumpbox/home servers on different sites and two of which are Linux hosts attached to slightly esoteric hardware. But I don't use the GPIO for anything. An x86 Linux box could replace any of them. Is that wasteful?

Linux has served me just fine for three decades. I got rid of my GrapheneOS phone because it constantly got in my way. My threat model does not involve bring pursued by nation state actors, and I don't equate security with having doors slammed in my face all day. Security is not the most important thing in life. Vigilance will serve you much better. As Franklin said, "Those who would give up essential Liberty, to purchase a little temporary Safety, deserve neither Liberty nor Safety."

If text-only communications media would get the government off our backs wrt to saving the children then I'd be all for it, but we ALL know that's just one of the 4 justifications they trot out for everyfuckingthing: women/children trafficking and CSAM, drugs, weapons, and terrorism.
