My theory is that people eat meat because they like the taste or don't like to differ from the normal diet (or both) even though they know it isn't morally justifiable. The biological determinism answer is a popular excuse
If someone tortured and killed animals but didn't eat them then he/she would be considered evil - but "I have to kill them because I've got a small appendix" is an excuse anyone can use.
In my experience it isn't true though, I haven't eaten meat or dairy for 12 years and I could still give a horse a good run. And the fact that bears don't steal my food is a major advantage...
