YUV/LUV is part of composite video color encoding. It was specifically designed to make color video signals viewable on black-and-white television sets. It works by making the default "Y" channel in a color video signal (also known as Luminance) represent the same brightness information as black-and-white signals, which are tuned to be most sensitive to human flesh tones. The "U" and "V" channels, which are modulated onto the "color carrier" that is embedded in the signal, carry enough orthogonal color information to reproduce the entire color image when combined with the "Y" channel in the right proportions.
