Just add a WiFi 6 to the Pi. This guy figured out how to get >1 Gbps on the Raspberry Pi 4. Complete with instructions.

You can turn a Raspberry Pi ($35 for the 2GB RAM Raspberry Pi 4 Model B) into a wireless access point.
