The first thing you can't leave out unless you plan to drop the whole scouring of the Shire, at least, not as I see it.
Check PJ's commentary on the extended Fellowship DVD. He does plan to drop the whole scouring of the Shire. At least that's what he said. He said Frodo's vision of the Shire in Galadriel's mirror was his (PJ's) reference to the scouring, but there won't be any more in the third movie.
