We can stick billions of them in close proximity, and figure out EXACTLY what the outcome will be for any given input.
Within a certain degree of error, yes. But a quantity like current is really a time average.
The math is reliable because we stick (or assume) billions of electrons in close proximity and look at the emergent patterns on a larger scale.
