Modern applications are personalized, secure and available anywhere on any device at any time. Look into developing a REST based web service using Java (my lang of choice) or your favorite flavor of C. Next put an HTML5 face on it using Javascript/AJAX to call your REST API. Check out backbone Javascript framework and Apache Cordova/PhoneGap. So I can't recommend just 1 language, but if you go with HTML5/JS/Java you can build anything you want on any device and deploy it however you choose.
