Check out Memory-Alpha.org, a WikiWiki-based Trek Multiverse encyclopedia. I've been spending a ton of time there lately.

Here are some choice articles that might be informative to you even if you've watched all or most of ENT, TOS, TNG, DS9, and VOY, and all the movies:

Plus many, many articles detailing the exploits of all of the characters (primary and recurring guests). But those are essentially plot rehashes, and are less interesting to me.
