Journal October_30th's Journal: Precious little fishes 4

Mmm.... nice fishes, precious little fishes.

I didn't really have a plan, but my simple improvised salmon dinner worked out fine. Here are the ingredients I used:

1 salmon fillet
Lemon juice
Potatos (wohoo! got this year's fresh potatos!)
Carrots, cauliflower and fresh onions
Fresh dill
A mixture of mozzarella and emmental.

Cold sour sauce:

200 g sour cream
1-2 tablespoons of chunk pickles
1 small chopped onion
Shredded dill

Prepare the fish dish complete with salt, pepper, dill, vegetables and cheese. Place the fillets, skin side down, in a pan and bake in the oven at 180 C for 15 minutes or until the colour of the fish starts to turn into pink. Add a bit of lemon. It's simple as that. Boil the potatos and serve them with the cold sauce and fish.

      Yeah, it was good. What really bugs me now is that I don't understand why I don't eat fish more often. It's not that expensive, it's tasty, it's good for you and, for instance, this dish was actually easier to prepare than some meat dishes I've been doing recently.

        For me, I find that it's harder to find good quality fish than good quality meat. You can find high quality fish here in Oslo, but you'll have to know where to get it, plus that the high quality stuff is more expensive. Where I grew up, we had quite good access to relatively inexpensive fresh fish of good quality, so I guess I'm a bit spoiled :)

        • It would be great to be able to go out and buy salmon that's been caught that morning, but it's a bit too much to ask when you live inland. :) You can, however, get fresh fresh water fish like pike which, when fried in butter, is delicious.
