Journal KshGoddess's Journal: Happy Monday 2

So, since I'm up in the air right now, of course I'm not sleeping.

I woke up at 4:30 this morning, and watched the clock until 5:55, when I decided it was time to get out of bed, whether I wanted to or not.

Got into work at just slightly before 8am. Meeting, said bye to the third shift, and started working (dear god no! not working!).

I've already had one mini-catastrophic event, and it's billing day on top of that. This will be exciting.

Oh, and I made banana bread on Friday night. MMmm... banana bread. My modified recipe:

1/2 c brown sugar
1/2 c white sugar
1 stick butter
2 eggs
1 c smashed bananas

1/2 c whole wheat pastry flour
1 1/2 c AP flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Preheat oven to 350.

Cream butter & sugar. Add eggs and smashed bananas. Dump in the rest of the ingredients and mix until smooth. I use a stick blender. Put in a small loaf pan. Bake for 1 hour. Cool 10 minutes, knock bread out of loaf pan, slice, enjoy.

We like whole wheat pastry flour. Currently using Bob's Red Mill brand, because the stuff at Wild Oats is *NOT* the same stuff we used to get at Henry's (although they're the same company). And I generally like to sub brown sugar for white (half of the recipe) for most recipes that only call for white.

    What? Oh never mind. Banana bread sounds nice though, I think I had that once. But surely you're supposed to smash eggs and mash bananas?

  • I need to make banana bread. I was actually thinking of doing it last weekend, but like allways, I got sidetracked with other things like taking naps and putting up halloween decorations. But I'll definitly give that recipe a try.
