Traditionally chefs are used to certain staples when it comes to cooking.
A vegan egg white is a heck of a lot better than substituting with flax mush I bet.
To minimize carbon footprint and be a more efficient society it needs to be easier for people to wean themselves off of animal products that take a lot of resources and bare ethically questionable practices.
This frees up farms to grow crops on the land that can be harvested numerous times in the period you would get similar nutrition from killing an animal and feeding it all it's life.
There is also the concern of hormones and psychological duress translating into the nutritional viability of the food you consume.
Either way I would not be dismissing products such as this.
