To respond to the first issue you raise, the tech is there to support timbral variation within computer generated scores. A Kawai K4r (or many other synths within the last 15 years) can use velocity data to control the envelope of a instrument (the attack time you refer to). It also has many other vectors of control (location on keyboard, aftertouch, etc) that can be routed to other parameters (filter cutoff, envelope times, etc). The reality is that very few musicians devote themselves to an electronic instrument the same way that a violinist gets to know his instrument, thus you will not hear these subtly nuanced performances that you get out of human musicians playing traditional instruments. The capability is already there though.
