In English rhyming slang (and I'm guessing from your examples Australian as well) it's the second word that rhymes, but it's usually abbreviated to the first word only.

So, 'butchers' is really 'butchers hook' which rhymes with 'look'. Another (easy) example, 'apples' is really 'apples and pears' which rhymes with 'stairs'.
