Ok, I'm finally running out of recipes. I'll post one or two more to round out the last chapter of my slashdot cookbook, then that'll be the end of it. But today, you get Uala Maoli otherwise known as Hawaiian Sweet Potato Casserole. It's different, but you should probably try a half recipe first to see if you like it - it otherwise makes an awfully large amount!

6 large sweet potatoes (2.5 lbs), parboiled and peeled (or a 40 oz. can)
6 tablespoons margarine or butter
2 teaspoons salt
6 bananas, sliced
1 cup brown sugar mixed with 1 teaspoon cinnamon
16 oz. can of crushed pineapple
1 cup pineapple juice mixed with 1 teaspoon lemon juice
2 tablespoons honey

Preheat yer oven to 450F.

Slice the sweet potatoes 1/2 inch thick.

Grease a heatproof casserole dish with a little bit of the margarine. Arrange in alternate layers starting with the sweet potatoes dotted with margarine and salt, then the bananas sprinkled with the brown sugar, and then the crushed pineapple. End with the sweet potatoes or the crushed pineapple.

Combine the pineapple/lemon juice and honey and pour over mixture.

Bake in a 350F oven for 40 minutes, or until browned on top.

Variations:
Add minced ginger root to the pineapple juice.
Use orange juice instead of pineapple juice.
