Journal eglamkowski's Journal: recipe of the day 1

More James Beard goodness for you, today you get a recipe for Old-Fashioned Cole Slaw. No mayo in this recipe!

2 pound head of cabbage
4 tablespoons butter
1 tablespoon flour
1/2 cup of water
2 eggs
6 tablespoons sugar
1 teaspoon dry mustard
salt to taste
1/2 cup of vinegar

Using a double boiler, heat the water in the bottom to the boiling point. In the top, put the butter and blend in the flour. Slowly add the water, stirring constantly and continue to cook and stir until it is well blended and smooth.

Beat the eggs with the sugar and mustard and add some salt. Pour the hot sauce over the egg mixture, stirring as you add it.

Return the sauce to the top of the double boiler and continue cooking and stirring until thickened. DO NOT OVERCOOK! Remove from heat the minute it is done.

Add the vinegar last, blending it in thoroughly. Set aside to cool.

Clean and shred the cabbage and soak in salted water for 1 hour. Drain well and pour the cooled dressing over it.
