Ok, I'm done with the slow cooker stuff. No cookbook today though, so instead you get some of the random stuff my wife cooks. You get two. And no measurements
First is Eggs & Chives. Or tomatoes. Or long beans. Eggs in China are pretty much never eaten for breakfast, so serve this as a side dish for dinner. I don't even like eggs, but this stuff is amazing.
Take 2-4 eggs (depending on the number of people to be served) and whip them in a small bowl with some salt and pepper.
Chop up your chives (or tomatoes or long beans) into small pieces (really tiny if you're using the long beans).
Then fry the eggs in a little bit of oil til they are about half cooked and still very runny.
Pour over the vegetables. Mix to coat and return to the wok. Cook until the eggs are done.
For my [wife's] second dish, I present to you Steamed Squash.
Take a Kabocha (or an Acorn Squash) - cut in half, remove the seeds. Peel off the rind. Then chop the entire thing into small pieces.
Place in a heat proof container. Cover with salt, ground black pepper and chile garlic paste to taste. Add a few tablespoons of water.
Boil 2-3" of water in a wok. Put squash on a steaming rack in the wok and cover the wok tightly. Steam for 20-30 minutes.
When done, mix it up a little bit and it will become like a thick paste. Consider this to also be a side dish.
