Here's another basic slow cooker recipe, a rather simple roasted chicken. If you've never thought to cook chicken in a crockpot, give it a try. Here's one way to go about it:

4 lb. chicken
1 teaspoon paprika
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried basil
1/2 teaspoon Beau Monde seasoning
1/2 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon ground pepper
1 tablespoon olive oil

Remove giblets from chicken. Remove as much fat and skin as possible. Rinse and drain the chicken, pat dry inside and out.

Mix all the seasonings with the olive oil to make a paste. Spread a little of the paste inside the cavity.

Place chicken, breast side up, in crockpot. Spread remaining paste over the top of the chicken.

Cover and cook on high for 3-3.5 hours (or 6.5 to 7.5 hours on low), or until chicken is cooked through and the juices run clear.

That's it.
Serve or use it as you would a normal roast chicken.
