More slow-cooker goodness! This Corned Beef and Cabbage is a very simple recipe, but the slower cooker really does do corned beef very nicely.

3 carrots, cut into thick slices
3-4 lb. corned beef brisket
2 medium onions, quartered
1 cup of water
small head of cabbage, cut into wedges

Line the bottom of the crockpot with carrot slices. Place the beef on top of the carrots. Put the onions around the beef. Add the water.

Cover and cook on low for 8-10 hours.

Add cabbage wedges to liquid, pushing down to moisten. Turn to high and cook an additional 2-3 hours.

  • I like to add some pickling spices to my corned beef. Some of the package brands come with a seasoning packet thrown in.

    Also, when the slow cooker is almost ready, I take some of the water out and use it to boil potatos. Then I put the potato water back in for the last few minutes. One can't have a classice Irish dish without potatos.
