Back to the Thai food again! And beef. I haven't really posted very many beef recipes... So here's some Fiery Hot Beef. Mmmmmmmm... Beef....
1 tablespoon brown sugar
1 pound beef top round steak
1 small onion, grated
1 tablespoon grated ginger
1 tablespoon dark soy sauce
1 teaspoon finely chopped garlic
3 tablespoons cooking oil
4 oz. of bamboo shoots, drained
3 green onions, cut into 1" pieces and quartered lengthwise
6 oz. can or jar baby corn, drained
2 fresh green chilies, seeded and sliced
2 fresh red chilies, seeded and sliced
2 tablespoons fish sauce
1/2 cup water
1 teaspoon cornstarch
Cut the beef into thin strips, cutting across the grain.
Combine the brown sugar, onion, ginger, soy sauce and garlic. Add the beef and toss to coat. Marinate in the refrigerator for 1 hour.
Heat wok over high heat. Add oil. Stir-fry the bamboo, scallion, baby corn and chilies for 1-2 minutes. Remove from pan.
Cook beef in wok until browned.
Mix the water, fish sauce, and corn starch. Add to wok and cook, stirring until thickened. Then cook and stir for two minutes more.
Return vegetables to wok. Cook for 2 minutes. Serve over hot steamed rice.
