Here's a recipe I have for Kung Pao Chicken, named for Kung Pao Ting, a noblemen who fled to the Szechuan province during the Ching Dynasty.

1 egg white
2 teaspoons cornstarch
pinch of salt
1/2 pound skinless, boneless chicken breast, cut into 3/4" cubes
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
2 teaspoons soy sauce
1 teaspoon sugar
1/2 teaspoon hot chili paste
1 garlic clove, minced
2 teaspoons peanut oil
4 dried Szechuan chile peppers, seeds removed and discarded (or left in if you like to burn your mouth out...)
3 cupts steamed broccoli florets
1/4 cup unsalted dry-roasted peanuts, coarsley chopped [thanks to intermodal for catching that typo]

In a medium bowl, whisk the egg white, cornstarch and salt until smooth. Add the chicken and stir to coat. Refrigerate covered for 30 minutes.

In a small bowll, combine the hoisin sauce, vinegar, soy sauce, sugar, chili paste and garlic with 3 tablespoons of water.

In a large wok, heat the oil. Add the peppers and cook until blackened, only about one minute. Remove the peppers but leave the oil.

Add the chicken and cook until it becomes translucent (not brown), 1-2 minutes. Transfer the chicken to a plate and keep warm.

Add the sauce and cook for about 30 seconds. Add the broccoli, chicken and peppers and stir gently until heated through, 2-3 minutes.

Top off with peanuts and serve over steamed white rice.

  • Hey, this isn't really on topic for this JE, but in general it is.

    Would you happen to have any "strange" or "off the beaten path" type of recipes for pizza? Friday night we make our own pizza (and they usually are rather untraditional -- like one of our favorites is a "southwestern" pizza) but we are always on the lookout for other strange and non-traditional pizza recipes... was wondering if there are any asian-influenced or mediterranean type of recipes??? Vegetarian or even vegan would be cool.

      • Heh, those are rather interesting! But, well, me and the better half are very strict vegetarians :-)

      Green bell peppers are about as far as I go on vegetarian pizzas :-p

        Heh, ever have a vegan pizza? (no cheese) Those are awesome! You can actually get a "vegan" pizza from Popa Johns... you can get their veg pizza and ask for (and get) no cheese... and its awesome.

          I tried it once, but slaughtering the vegans is messier than I bargained for.

            Yeah, and vegans also aren't easy to come by, and hell, for being so mal-nurished, they can run fast, and smart... not the easiest to trap!
