Another of my relatively rare soup recipes for you. This one is for the garlic lovers, since there seems to be quite a few of you here :-) It's Garlic Soup! Yum....

2 cups chicken broth
1 tablespoons soy sauce
salt to taste
1/3 cup long-grain rice
1 garlic bulb (not clove), unpeeled
4 teaspoons minced, peeled ginger
5 oz. boneless, skinless chicken breast, cut into 1/4" slices
2 carrots, julienned

In a medium saucepan, combine the broth, soy sauce, salt and 4 cups of water and bring to a boil.

Reduce heat and stir in the rice, garlic and ginger.

Cover and simmer until the rice is very soft and the garlic very tender, about 45 minutes.

Remove garlic from the saucpan. Cut off the stem end and squeeze the pulp into a food processor. Add 1/4 cup of the broth and puree. Return to the saucepan and bring to a boil

Add the chicken and carrots. Cook until the chicken is cooked through and the carrots are tender, about 5 minutes.
