Today you actually get THREE recipes, cause they are simple side dish vegetable type things. For your green veggie, you get Portuguese Fried Broccoli. If you are a corn lover, try this Corn from the Islands. And finally, for those who love their sweet potatoes, Sweet Potato Mock Poi, since real poi is so damn expensive to have shipped stateside, but sweet potatoes are dirt cheap.
Portuguese Fried Broccoli
1 bunch of broccoli
5 tablespoons of olive oil (virgin or extra virgin if you've got it)
2 garlic cloves, minced (or more...
1 small onion, chopped
salt & pepper to taste
Parboil the broccoli for 1 minute.
Heat the oil and sautee the garlic and onions until golden brown. Add the broccoli and cook til heated through. Add salt & pepper.
Corn from the Islands
2 cups of milk or light cream
2 cups water
1 tablespoon butter
2 teaspoons sugar
6 ears of corn, cleaned and rinsed
In a large saucepan, combine milk and water. Add the butter and sugar and stir.
Bring the mixture just up to a boil (but not actually a full boil), add the corn (it should be completely covered by the milk).
Cover tightly and let simmer for 3-5 minutes.
Serve with extra butter on the side
Sweet Potato Mock Poi
6 sweet potatoes, boiled, or 1 can (40 oz)
salt & pepper to taste
coconut milk
Mash the sweet potatoes and season with salt & pepper.
Graudally beat in enough coconut milk to make the desired consistency (poi is traditionally measured in "fingers" - one-finger, two-finger, etc.).
