
Journal eglamkowski's Journal: recipe of the day
It's salad time! I generally don't eat salads, but when making a big meal, this is an interesting one to try. Whether its a luau or if you just do like salads in general, give this Orange and Spinach Molokai a try!
1 pound raw spinach, washed, drained and stemmed
1/4 pound fresh mushrooms, sliced lengthwise (or a 4 oz can sliced and drained)
1 can (5 oz) water chestnuts, rinsed, drained and sliced
4 navel oranges, peeled and diced
1/4 cup salad oil
2 tablespoons vinegar
2 tablespoons orange juice
1 tablespoon soy sauce
1/4 teaspoon dry mustard
1/4 teaspoon salt
dash of fresh pepper
Tear spinach coarsley into a large salad bowl. Add mushrooms, water chestnuts and oranges.
In a large jar, combine the rest of the ingredients. Shake and pour over the salad, and toss well.
