Ok, it's about time I posted a dessert
Actually, it's not the best dessert I've ever had, but if you are planning a luau (with that luau chicken I posted earlier), you'll want an authentic luau dessert... So here's some Haupia, a traditional island Coconut pudding. Don't eat too much at once unless you grew up eating lots of coconut every day - the coconut milk will cause you some... trouble...
3 cups coconut milk
4 tablespoons sugar
dash of salt
dash of vanilla
3 tablespoons cornstarch
In a saucepan, heat all but 1/4 cup of coconut milk over low heat (DO NOT BOIL).
Add sugar, salt and vanilla.
Mix remaining coconut milk with cornstarch and add gradually to pan, stirring until mixture thickens.
Pour into a square cake pan and chill.
Traditionally, the pudding is cut into small cubes and placed on clean ti leaves.
Serve topped with whipped cream and either pineapple bits or kumquats!
Mmmm... kumquats...
