Journal eglamkowski's Journal: recipe of the day

Today I bring you two recipes, because they're both just fried rice. Both are quite good, but I prefer the first one, nasi goreng over the second one, kao paht khai (which is a Thai recipe).

[RECIPE 1]

Cooked Rice
1 tablespoon vegetable oil
1 tablespoon butter, melted (please use real butter and not some substitute spread)
3 shallots
1 clove of garlic
1/4 pound of chicken breast, sliced into small pieces
3 medium carrots, diced very small
1/4 pound of button mushrooms, thinly sliced (I make it without this, so consider it optional)
1 teaspoon paprika
1/2 teaspoon cayenne
2 teaspoons tomato puree or ketchup [catsup? ;-]
1 tablespoon light soy sauce
1 teaspoon salt

Heat the oil and butter in a wok and fry the shallots and garlic for a minute.

Add the chicken and fry for 2 minutes.

Add the carrots and mushrooms and continue frying for another 2 minutes.

Add the paprika, cayenne, tomato puree, soy sauce and salt and stir for 1 minute more, or until the carrots and mushrooms are cooked.

Now add the rice and mix well, stirring continuously until hot.

Optionally, fry up an omelette and cut it into narrow strips and serve over top of the rice.

[RECIPE 2]

2 tablespoons peanut oil
2 large green chiles, seeded and thinly sliced, or 1/2 teaspoon ground white pepper
6 scallions, thinly sliced, white and green parts separated
2 cloves garlic, minced
6 cups cold boiled rice
1 tablespoon light soy sauce
1 tablespoon fish sauce
pinch of salt
2-3 eggs, beaten
2 tablespoons chopped ciltanro

Heat the oil in a wok and fry the chiles, the white part of the scallion and the garlic for 1 minute.

Add the rice, stirring continuously until the rice is hot.

Add everything else and cook until the eggs are cooked and well mixed.
