Journal eglamkowski's Journal: recipe of the day 2

If you're jewish, muslim or vegetarian, you can skip this one. Oink oink. Hot and Sour Pork or babi asam pedas. This is a really freakin' great dish if you like hot and sour type foods - I highly recommend it.

1 teaspoon salt
2 teaspoons white malt vinegar
1 pound lean pork fillet, cut into 3/4 inch cubes
4 shallots or 1 onion
2 cloves garlic
1 1-inch piece of ginger
3 candlenuts or raw macademia nuts (optional)
2 large red chiles, seeded and chopped, or 1.5 teaspoons cayenne
1/2 cup sunflower or olive oil, divided
6 tablespoons water, divided
3 tablespoons of white malt vinegar
1 tablespoon sugar
6 oz. can of bamboo shoots, drained and rinsed
salt to taste
3 tablespoons chopped mint or basil (I use 3 teaspoons of dried herbs)

Rub the salt & vinegar into the pork pieces and leave for 30 minutes

Put the shallots, garlic, ginger, candlenuts and chiles into a blender. Add 2 tablespoons of oil and 2 tablespoons of water and blend into a smooth paste.

Heat the remaining oil in a wok and fry the pork in batches for 4-5 minutes each time. Remove with a slotted spoon.

Discard the oil except for 2 tablespoons worth. Reheat this and fry the paste from the blender, stirring continuously, for 3 minutes.

Add the vinegar and sugar, stir, then add the remaining water, bamboo shoots, and pork.

Simmer for 2 minutes and add salt as needed.

Stir again for another minute, add the mint or basil and stir to mix it in thoroughly.

Serve immediately with rice or boiled new potatoes.

  • I'm curious why you specify White Malt Vinegar - white vinegar [onecook.com] by definition is distilled, and has no character of its source liquid.

    Which isn't to say it doesn't have a place in cooking, its just that it doesn't matter whether you used grain, apples, wine, or whatever to make it.

    I know here in the US I have never seen "White Malt Vinegar" for sale, the white vinegar we have here is made from apples, and is just labelled "white vinegar" or "distilled vinegar". Tho I know you got the recipe off the net (p
