Journal eglamkowski's Journal: recipe of the day

Ah, the potato(e). I love potatoes, actually. At Rutgers I ate them with every meal. Yep, the cafeteria served them even with breakfast! So now I bring you Old French Style Potatoes

2 pounds boiling potatoes (I prefer red)
1 medium yellow onion, peeled and chopped
2 tablespoons of flour
4 tablespoons of olive oil
2 tablespoons of chopped parsley (or 2 teaspoons dried parsley)
1/2 teaspoon of ground nutmeg
salt & pepper to taste
grated rind and juice of 1 lemon

Peel and cut the potatoes into quarters. Parboil in salted water for 3 minutes and then drain.

Mix all the remaining ingredients, except the lemon juice. Place in a buttered baking dish and drizzle a little bit of oil over top.

Bake at 450 degrees F (that's 230 C for you non-americans, or 505K for the scientists) for 20 to 25 minutes, or until nicely browned and tender.

Pour the lemon juice over the top just before serving.

Random tips:

One teaspoon of a dried herb can be substituted for 1 tablespoon of the same fresh herb. Just don't do this subsitution if the herbs are be blenderized.

For best results when boiling potatoes, make sure they are all the same size, or cut them into pieces that are the same size. That way when any one piece is done, they should all be done.
