
Journal eglamkowski's Journal: Potato(e) Salad 1
A very yummy, low fat potato salad recipe:
Boil up 12 new red potatoes (1-2 pounds worth) til nice and tender. Cool and chop.
In a little bit of oil, sautee a yellow onion.
Add the following and stir: 1 tablespoon of flour, 1 tablespoon of sugar, 1/2 teaspoon of salt, 1/2 teaspoon of celery seeds, 1/2 teaspoon of dry mustard, black pepper to taste.
Add in 2/3 cup of water and 1/4 cup of vinegar and stir til bubbly and tickened.
Add the potatoes and cook til well mixed and heated through.
Garnish with one of more of the following: parsley, chopped up hard boiled egg, bacon bits.

Anyway, to always nail boiling potatoes is to only fill the pot with enough water to cover your potatoes and to boil uncovered (a lot of people boil with a cover).
Man, works everytime, not too soft, no hard spots, perfection!
I use a similar recipe, but once the potatoes are done... i just toss it into a bowl with some EVOO, white wine vinegar, fresh dill, some dijion mustard, kosher salt and cracked pepper... mi
