Rather than wait til tomorrow morning, I'm just going to do the final recipe for this chapter of the cookbook tonight. And I end the Indian chapter with: split lentils with zucchini
2/3 cup small split yellow lentils (moong dhal)
1/2 teaspoon turmeric
1.25 cups water
4 tablespoons vegetable oil
1 large onion, finely sliced
2 cloves garlic, crushed
2 fresh green chillies, chopped
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida
A few fresh coriander and mint leaves, chopped
6-8 curry leaves
salt to taste
1/2 teaspoon sugar
7 oz. canned tomatoes, chopped
8 oz. zucchini, cut into small pieces
4 tablespoons of lemon juice
1) In a saucepan, boil the lentils and turmeric in the water and then simmer until the dhal is cooked but not mushy. Drain and reserve both the liquid and the dhal.
2) Heat the oil in a frying pan and fry all the remaining ingredients except the lemon juice. Cover and cook until the zucchini are nearly tender but still crunchy.
3) Fold in the drained dhal and the lemon juice. If the dish is too dry, add a small amount of the reserved water.
