Indian vegetarian. This time two recipes because they are side dishes: masala mashed potatoes and spicy cabbage.

Masala Mashed Potatoes

3 medium potatoes
1 tablespoon chopped fresh mint and coriander, mixed
1 teaspoon mango powder
1 teaspoon salt
1 teaspoon crushed black pepper corns
1 fresh red chilli, chopped
1 fresh green chilli, chopped
4 tablespoons butter

1) Boil the potatoes until soft enough to be mashed. Mash down using a masher

2) Blend together the remiaining ingredients into a bowl.

3) Stir the mixture into the mashed potatoes and mix together thoroughly with a fork.

Spicy Cabbage

4 tablespoons butter
1/2 teaspoon white cumin seeds
3-8 dried red chillies (to taste)
1 small onion, sliced
2.5 cups cabbage, shredded
2 medium carrots, grated
1/2 teaspoon salt
2 tablespoons lemon juice

1) Melt the butter in a medium saucepan and fry the white cumin seeds and dried red chillies for about 30 seconds.

2) Add the onion and fry for about 2 minutes. Add the cabbage and carrots and stir-fry for another 5 minutes or until cabbage is soft.

3) Stir in salt and lemon juice and serve!

I often find myself without lemon juice and instead will use the 1 teaspoon of white vinegar for every tablespoon of lemon juice. Same trick works for lime juice.
