Winamp had plugins for formats not anticipated by the operating system. I once (LONG ago) wrote a simple plugin that executed .bat files, so I could queue OS commands in my playlist (shutdown at the end of the list, etc.). Pretty cool (if I might say so myself :) ).

I think it's not NAT per se that people want, but the upstream security you mention. I like having one box doing my security so the box I work on doesn't have to spend CPU cycles worrying about that. That the upstream box does NAT too, is just a means to an end in a still predominantly IPv4 world. But because that box is the NAT box, and because that box provides security, NAT = security, in most people's minds.

I think a store can differentiate on the things they sell without it being censorship. For example, a toy store probably won't sell cough drops. An erotica store (sex shop) might sell erotic literature that a normal book store might not. Amazon has some of the same policies in place and that is their right. If someone finds a way around the toy store's policy by selling cough drops in playful packages, then the toy store might consider not selling them anymore after finding out.

If, however, the toy store starts removing anything that kinda looks like a cough drop in a frenzy. Then, yes, that would be censorship.

we'd just be better at identifying molecules flying around in the air

Which is the goal, ultimately. At least when used to detect drugs, explosives or other illegal substances. So even if it were easier to identify molecules flying around in the air than it is to build a smelling machine, it's easier still to use smelling animals.
