I'm inclined to say econ, but that's not everyone, just political science majors.
In reality I think the most important 101 course would be a real, serious reading comprehension course, this is more than statistics, which you dont really need to take to understand how they can be manipulated. Being able to pick out what is really going on in a paragraph and what the writer is trying to hide from you is an incredibly important skill in our society, whether the writer is a lawyer or a blogger.
In the same vein I would say that a Critical Thinking 101 course would be equally important and get people to.... wait
Scratch all of the above. A real, serious course about the structure of american government, our laws, and the importance of civil society and pluralism. Forget any specialized knowledge, if they understand that corporations dont control government and have an appreciation for rule of law it really doesnt matter what else they do in life.
